Ingredients

  • 1 cup pumpkin puree.
  • 1/3-1/2 cup protein powder. (amount will depend on the type of protein powder used.
  • Optional: 1 – 3 Tbsp. Erythritol or sweetener of choice.
  • Optional: dash of cinnamon.

Preparation

In a bowl mix together pumpkin puree, protein powder, Erythritol, and cinnamon if using.

Mix until a dough is formed and able to roll into bites. IMPORTANT – If the mixture is too wet, add more protein powder or flour such as almond or coconut flour.

Once the correct consistency is reached, use a spoon to scoop the dough and roll into balls. Place in the refrigerator for 1 hour.

After 1 hour, melt chocolate and coat or drizzle each bite with chocolate.

Place in the refrigerator again to allow the chocolate to harden.

Store the bites in the refrigerator or freezer. You can prepare a large batch and store in the freezer. The bites should last up to 5 days in the refrigerator or a month minimum in the freezer.
